Aged 26-28 months has the ideal aging period so it is perfect for any situation. Grainy and wonderfully friable, this cheese embodies the perfect balance between sweet and salty. It is very easy to digest; it can be used in any recipes, grated or chipped. Wonderful on its own as a snack, simply served on bread, with cold cuts, it pairs well with jams and fresh fruit. Essential for making savoury cakes and many Italian dishes: risottos, pasta dishes, salads. Pairs perfectly with red wines, especially Red Lambrusco and a few drops of Balsamic Vinegar.
