Aged 14-16 months, firebranded certificate by CFPR Consortium (Consorzio Formaggio Parmigiano Reggiano). It has a pale yellow colour with visible tyrosine crystals, showing the granularity aging process.
Aged 14-16 months is less hard, ideal to eat on its own. Still young and not as aged as the 26-28 months it has a sweeter taste. Perfect for aperitivo, it pairs really well with Rose’ Lambrusco, raw vegetables, salads, fresh fruit, jams and honey. Essential for making savoury cakes, baked vegetables and many Italian classics such as lasagne and aubergine Parmigiana.
